Dry cider is the foundation of cider craftsmanship. However, achieving a perfectly dry cider is not easy. There are many paths to perfection, both traditional and modern ones. The final result matters: taste, aroma, body.

What ciders should be submitted in this category?

  • Still dry cider (not carbonated)
  • Dry cider of spontaneous fermentation (not carbonated)
  • Still dry cider aged in barrels (not carbonated)

In this category, completely fermented ciders should be submitted, dry, with little or no residual sugars. They can be fermented with noble yeasts or through spontaneous fermentation, made from any variety of apples, non-carbonated with any initial extract. Aging in wooden barrels is permitted.
